Enigma’s wine program is built around a simple balance: confidence and curiosity. The classics form the list’s foundation — Champagne, Chablis, Barolo, Napa Cabernet — chosen not for fame, but for typicity, honest farming, and one simple question: is it delicious? “No one should need to Google half the list before feeling comfortable ordering a bottle.”

The pairing, though, carries Enigma’s spirit of mystery and discovery. Guests choose it before knowing the menu — an act of trust that says take me somewhere. So she takes them: volcanic-island whites with seafood, an aged Savennières that makes a Chablis lover ask “what is this?”, a Syrah from British Columbia’s Okanagan Valley that no one places until they see the label. The program is also built to understand Toronto — a city where guests didn’t all grow up tasting the same flavours — with dessert pairings like moelleux Jurançon or Nova Scotian ice cider that speak to palates finding beauty in restraint.

Every bottle must be quality-driven, delicious, and have a reason for being here. “I don’t want a strange wine program,” Vesper says. “I want a curious one.”

For Bishop Wierzbicki, a drink is a form of communication — through ingredients, places, seasons, or ideas. Raised in Kitchener-Waterloo and drawn to Toronto for literature, Bishop found his way behind the bar through the city’s music venues, where a job became a fascination with cocktails, wine, food, and hospitality. Years leading the bar program at Canoe — a restaurant deeply rooted in Canadian cuisine — shaped an approach grounded in Canadian ingredients and a sense of place, and in the dialogue between kitchen and bar.

At Enigma, he pushes that dialogue further. Beverages are treated as part of the tasting menu’s progression: culinary technique, thoughtful pairing, and storytelling combine to create drinks that exist in conversation with the food. It’s a continuation of what first drew him to literature — taking an idea, giving it form, and sharing it to create something memorable.
